Mishima Reserve American Wagyu Cheeseburgers

2 lbs. Mishima Reserve ground beef

3 tsp. Kosher salt

1.5 tsp. freshly ground black pepper

1.5 tsp. granulated garlic

1/2 cup Spicy Mushroom Aioli

8 oz. Beecher’s Just Jack or Beecher's Flagship Cheese

Quick Pickled Red Onions

4 burger buns (preferably brioche)


1. In a large bowl, lightly mix the meat and seasoning until just combined.

2. Divide into 4 portions. Gently shape each portion into loose, 3/4-inch-thick patties with rough edges. Make the centers of the patties 1/2 inch thinner than the edges. Set aside until ready to cook, up to 30 minutes at room temperature or up to 24 hours in the refrigerator. 

3. Grill over high heat to the desired doneness. Top each patty with 2 ounces of cheese during the last minute of grilling and let melt. Remove from the grill.

4. Assemble the burger on your favorite bun with your preferred toppings. We recommend spreading 2 tablespoons of the Aioli on each bottom bun and topping the burger with Quick Pickled Red Onions.
