For a mind-blowing main, the gorgeous Mishima Reserve Tomahawk (or three) will impress any beef fanatic and is excellent on the grill. Grill the cut at medium-high heat about 1 ½ minutes per side. Watch for flare-ups and rotate the cut to make a cross-hatch mark. When you are ready to serve your guests, finish the steaks on the top rack of the grill or in the oven on 350º to your desired temperature. Check doneness with a Thermapen Mk4 for quick and accurate reads on internal temperatures. Let your steaks rest for 5 to 10 minutes prior to serving or cutting. This allows the temperature to equalize internally and allows the steak to "hold" its juices.

When preparing your burger, no need to mess too much with the beef – just some salt, a few twists from the pepper mill, maybe a dash of something secret, and a few kneads to fold everything in. Sear the burgers ahead of time without finishing them and then refrigerate. When you are ready to serve your guests, finish the burgers on the grill or in a 350º F oven (if you’re at home). Pro Tip: Before your guests arrive, season your beef with The Butcher’s Table Seasoning at least four hours prior to cooking. An hour before grilling, remove the cuts from the refrigerator to allow them to come to room temperature.
